Combine pork, shrimp, shiitake, ginger, spring onions, oyster sauce, sesame oil, salt, pepper and cornstarch in a bowl. Mix well.
Take a piece of wonton wrapper and fill with about a teaspoon of the prepared filling in the center.
Wet edges with water and fold up to seal in a triangle shape.
Wet the bottom two points and fold in, as shown.
Repeat these steps for all wontons.
Bring the chicken stock, soy sauce, green onions and sibut to a simmer in a large pot. Bring a separate pot of water to a boil and cook your egg noodles to al dente.
Add wontons and simmer for 7-10 minutes, or until cooked. Add in the bok choy during the last 5 minutes.
Arrange noodles in serving bowls. Top with wontons and ladle in hot soup. Garnish with chopped spring onions. Enjoy!
