dried oregano

dried basil

lemon juice

Dijon mustard

honey
salt and pepper, to taste

Step 1

Prepare the vegetables. Wash and cut cucumbers, tomatoes and avocados into small bite-sized pieces.

Place the chopped vegetables into a mixing bowl. Drizzle a little olive oil on top, then add dried oregano and basil. Toss lightly.

Prepare the lemon vinaigrette. In a small mixing bowl, add the remaining olive oil, lemon juice, Dijon mustard, honey, salt and pepper. Whisk together until well combined.

Divide the tomato, cucumbers, and avocado into two bowls or plates. Drizzle with the lemon dressing, to taste. Enjoy!
