Measure and prep all ingredients.
In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the onion and red bell pepper and sauté until softened, about 5 minutes. Add the garlic cloves and cook until fragrant, less than 1 minute.
Add the ground beef and cook, stirring occasionally, until browned and cooked through, about 10 minutes. (See notes 5.)
Add the cumin, chili powder, salt and pepper. Stir well.
Heat the corn tortillas in a dry skillet or in the microwave according to the package's instructions.
Assemble the tacos. Place a portion of the beef mixture in the center of each tortilla and top with shredded cheese, chopped cilantro and salsa. Serve with lime wedges on the side. Enjoy!
Notes:
- If you prefer, you can use ground turkey or chicken instead of beef.
- For a healthier version, you can use whole wheat tortillas instead of corn tortillas.
- For a gluten-free option, be sure to use gluten-free tortillas.
- To prevent the tortillas from tearing when you heat them, cover them with a damp paper towel before microwaving.
- Make sure to cook the ground beef to an internal temperature of at least 160°F to avoid foodborne illness.
