dry pasta, such as rotini, penne or farfalle

boneless, skinless chicken breasts, chopped (preferably organic)

chicken broth
1/2 cup(s)
water
1/2 cup(s)
Buffalo sauce or hot pepper sauce
1/2 cup(s)
plain Greek yogurt or sour cream
1
bunch green onions, trimmed and chopped
2 tblsp
chopped chives
1/2 cup(s)
sharp cheddar cheese, shredded

shakes of hot sauce, to taste

Step 1

Preheat the oven to 350°F. Prepare a roasting pan for the buffalo chicken pasta. Bring a large pot of salted water for the pasta. Cook the pasta to al dente according to the package’s directions. When the pasta is al dente, drain the pasta.

Place the drained pasta in a roasting pan.

While the pasta is cooking, poach the chicken. In a medium saucepan over medium heat, bring the chicken broth and water to a boil.

Poach the chopped chicken breasts in the broth mixture for about 5 minutes, until the pieces are just cooked.

In a shallow bowl, add the buffalo sauce and the poached chicken. Toss to coat the chicken in the buffalo sauce.

Transfer the coated chicken and the remaining sauce to the roasting pan with the pasta.

Add the yogurt, green onions, chives and cheese to the roasting pan and toss thoroughly.  Season with the hot sauce to taste.

Bake in the oven for about 10 minutes, until the cheese has melted. Serve hot. Enjoy!
