Step 1

Marinate the pork. Combine all ingredients for the marinade in a resealable bag. Add pork tenderloin and allow to marinate for 2-4 hours in the refrigerator.

Prepare the pickled vegetables. Mix together lime juice, fish sauce, sugar, garlic, red chili and cilantro in a bowl. Toss in carrots and daikon. Chill until ready to serve.

Take pork out of the fridge and discard the marinade. Grill for 5-7 minutes on both sides. Set aside to rest for 10 minutes.

Slice baguette in half and toast. Spread a thin layer of mayonnaise on both halves. Top one half with pickled vegetables.

This upped my sandwich game! No more boring PBJ for me - the pork tenderloin was dinner first, then made it into the sandwich. Sooo good!
