For the Banh Mi

Kecap Manis (sweet soy sauce)

Step 1

Marinade the pork. Combine all ingredients for the marinade in a resealable bag. Add pork tenderloin and allow to marinate for 2-4 hours in the refrigerator.

Prepare the pickled vegetables. Mix together lime juice, fish sauce, sugar, garlic, red chili and cilantro in a bowl. Toss in carrots and daikon. Chill until ready to serve.

Take pork out of the fridge and discard the marinade. Grill for 5-7 minutes on both sides. Set aside to rest for 10 minutes.

Slice baguette in half and toast. Spread a thin layer of mayonnaise on both halves. Top one half with pickled vegetables.

Carve pork into thin slices.

Fill the baguette with pork. Drizzle banh mi sandwiches with Kecap Manis. Slice sandwiches in half and serve. Enjoy!

This upped my sandwich game! No more boring PBJ for me - the pork tenderloin was dinner first, then made it into the sandwich. Sooo good!
