For the Sushi Rice

sushi rice, rinsed

water
1/4 cup(s)
rice vinegar
2 tblsp
sugar
1/4 tsp
salt
1 tsp
sesame oil
For the Avocado Roll

sheets of nori

large avocado, pitted and sliced
1
batch of sushi rice
1 tblsp
black sesame seeds
soy sauce, for dipping
wasabi paste, for dipping

Step 1

Make the sushi rice. In a small saucepan, combine the rice and water.

Bring the mixture to a boil and then reduce the heat to low. Cover and cook for 20 minutes. Turn off the heat and leave the lid on for another 10 minutes.

In a small saucepan, heat the rice vinegar, sugar, salt and sesame oil just until the sugar is fully dissolved.

Fluff the cooked rice with a fork while stirring in the vinegar mixture. Set aside to cool.

Assemble the avocado roll. Lay a sheet of nori on top of a sushi mat. Evenly spread about ½ cup of sushi rice on top of the nori.

Arrange the slices of avocado close to the top edge (the edge closest to you) of the nori.

Lift one edge of the sushi mat and tightly roll up to the other end. Repeat with the remaining ingredients.

Slice each sushi roll into six pieces and garnish with sesame seeds. Serve with soy sauce and wasabi paste for dipping. Enjoy!

As a vegetarian, it's so hard to find sushi I can eat. This is becoming a new staple meal in my house!
