The most refined of Japan's traditional wagashi confections, nerikiri are sculpted entirely by hand into miniature scenes from nature – a camellia in winter, a maple leaf in autumn, a wave in summer – and served alongside matcha in the tea ceremony.
You'll learn what nerikiri is made of, how the seasons dictate its shapes and colors and the traditional hand techniques used to form it. All the dough is prepared for you in advance, so you spend the class on the part that matters – pressing, pinching and layering by hand until an edible sculpture appears. It's slower and quieter than most cooking classes, and that's the point. The motifs change with the season and are chosen by the chef, taught in a small group with individual attention.
