Measure and prep all ingredients.
Spread caramel syrup on the flat side of the chocolate chip cookie. Repeat with the remaining cookies.
Place one 4-ounce scoop of strawberry ice cream on one cookie. Top with a second cookie, caramel side down. Press cookies together to form a sandwich.
Coat the edges of the ice cream sandwich with pistachios.
