rum
3 oz
pineapple juice
1 oz
Campari

lime, juiced, see notes 1
1/2 oz
simple syrup, optional, see notes 2
ice
pineapple wedge, for garnish
pineapple leaves, for garnish
mint, for garnish

Directions 3 steps | 5 Minutes

Step 1

Measure and prep all ingredients.

Step 2

In a cocktail shaker, combine ice, rum, pineapple juice, Campari, lime juice and simple syrup (if using). Shake until cold. 

Step 3

Serve in a glass filled with ice. Garnish with a pineapple wedge, pineapple leaves and mint. Sip and enjoy!


Notes:

  1. 1 oz of lemon juice can be substituted for the lime juice. 
  2. Add the simple syrup if the Campari is too bitter.
