Step 1
Measure and prep all ingredients.
Step 2
In a cocktail shaker, combine ice, rum, pineapple juice, Campari, lime juice and simple syrup (if using). Shake until cold.
Step 3
Serve in a glass filled with ice. Garnish with a pineapple wedge, pineapple leaves and mint. Sip and enjoy!
Notes:
- 1 oz of lemon juice can be substituted for the lime juice.
- Add the simple syrup if the Campari is too bitter.
