The chefs of New Orleans are famous for their ability to blend culinary influences from all of the cultures that inhabit the seaport town, and Chef Claudia's Italian Creole meal is a wonderful example of those talents.
Begin with a salad of greens and a warm bacon vinaigrette, then move on to veal persillade seared with Italian spices and accompanied by risotto Milanese with golden saffron and white cheddar cheese. For dessert, you'll make then enjoy a rich bread pudding with fresh fruit and a sauce with bourbon, butter and cream.
Guests are welcome to bring wine and beer to enjoy during the class.
