Cooking Class - Vegan French Cooking
In this hands-on cooking class, Chef Cregg will teach you foundational techniques from traditional French cuisine, including grilling, braising and baking, while incorporating fresh, plant-based ingredients.
You'll first prepare a wild mushroom toast with grilled baguette and delicate microgreens. Next, Chef Cregg will guide you as you prepare a hearty vegan coq au vin featuring lion’s mane mushrooms, rainbow carrots and rich, port wine accompanied by braised leek gratin made with an oat milk and nut cheese cream sauce. For dessert, learn how to bake classic blueberry and lavender clafoutis.
Guests are welcome to provide wine and beer to enjoy during the class.
