Cut rack of lamb into individual lollipop chops.
Chop rosemary and thyme.
Mince garlic and mix together with rosemary and thyme. Season with salt and pepper.
Sprinkle the herb mixture on one side of the lamb, reserving half of the mixture for the other side.
Heat a cast-iron pan over medium heat until warm. Add the lamb chops with the herb side down and cover the top side with the remaining herb mixture.
Cook on each side until medium-well, about 3 minutes.
Plate the chops and serve warm. Enjoy!
