Online Cooking Class - DIY Ramen Workshop

Learn all about handmade ramen soup in this immersive online culinary experience.

A number of umami-laden ingredients come together to create classic Japanese ramen. And in this virtual cooking class, you'll learn how to combine them to make ramen at home. This rich, seasoned noodle soup has a miso broth base and is studded with freshly cooked skin-on chicken thighs, dreamy jammy eggs and steamed bok choy, and topped with scallions.

Ingredients


Fresh Groceries:
2 pounds bone-in, skin-on chicken thighs
1 3-inch piece fresh ginger
3 garlic cloves
1 bunch scallions
1 medium onion
4 heads baby bok choy
1 pound dried or fresh ramen noodles, or udon noodles
1 quart chicken broth
2 packets instant dashi broth or make your own: 1 piece kombu seaweed + ¾ ounce bonito flakes
½ cup mirin (can substitute with dry sherry or sweet marsala wine plus sugar)
2 tablespoons white or yellow miso paste

Pantry Staples:
Kosher salt and black pepper
4 large eggs
¼ cup sugar
2 tablespoons dark sesame oil
1 cup soy sauce
2 tablespoons sake, white wine, vermouth, or dry sherry
1 star anise, optional
