To begin, savor caramelized plantains atop whole-grain toast with greens, avocado, and feta. Then, learn to craft your own West Indian masala blend as Chef Karmala demonstrates its use in a classic West Indian curry chicken. Prepare aromatic coconut rice and peas with fresh thyme and scotch bonnet peppers to enjoy with your main course. Finally, discover the traditional treat of "Gulgula," donuts with blistered raisins, made with jaggery, warm spices, and vanilla.
