After pursuing culinary school and retiring from teaching, Chef Karen became a chef instructor in 2019. Promoted to Culinary Lead in 2020, she continued to excel, recently stepping into the role of Resident Chef. Working as a Chef Instructor has rekindled her passion for food and sharing culinary knowledge with every guest she meets.

The French Pastries for Fall should have been a great time to learn about making laminated dough and making palmiers and kouign-amann. It seemed as if Chef Jocelyn had never made these pastries before and hadn’t bothered to practice ahead of time. Correctly pronouncing the pastries being made in class could have been accomplished with a quick internet search and the directions given to fold the dough for palmiers was completely incorrect even though she was reading from the printed instructions that were correct. We were told to cut the dough into strips and then form a heart shape, not at all like the printed instructions or any online search. Making laminated dough was saved to the last of the class and better time management would have made this less rushed and more complete. The reason for taking the class was for technique, however the instructor fell short on preparation and knowledge.
