Discover the ultimate balance of tradition, innovation, and cutting-edge performance with the Miyabi Kaizen II 6.5-Inch Bunka Knife. Rooted in centuries-old Japanese blade-making heritage, this Bunka-style knife offers a thinner, lighter, and more agile alternative to the classic Western chef’s knife. Perfect for chefs and home cooks who demand precision and versatility in the kitchen.
The Miyabi Kaizen II 6.5-Inch Bunka Knife features a Bunka blade with a Kiritsuke-style reverse tanto tip for enhanced precision and control. Crafted with a hard FC61 super steel core and 48 layers of Damascus stainless steel, it offers a Rockwell hardness of 61 for long-lasting sharpness. Hand-honed to a 9.5°–12° edge using the traditional Honbazuke method, the blade delivers exceptional cutting performance. The ergonomic D-shaped handle is made from black Pakkawood for comfort and durability, while the acid-dipped flower Damascus finish adds striking visual appeal. Handcrafted in Seki, Japan.
This 6.5-inch Bunka knife excels in a wide range of kitchen tasks from fine slicing and dicing to intricate vegetable prep and protein trimming. The Kiritsuke-style tip allows for enhanced precision, making it ideal for controlled cuts and delicate work.
