The D-shaped wooden handle features a rounded design crafted from cocobolo rosewood pakkawood, which offers comfort and ergonomics for fatigue-free cutting. The CRYODUR ice-hardened blade has a Rockwell hardness rating of 63 to provide years of culinary use. Hand-honed on both sides, the thin Japanese blade profile has a katana edge to offer precise and razor-sharp slicing in a sleek and refined design. A traditional three-step Honbazuke process achieves a 9.5 to 12-degree angle for precision cutting. The Miyabi Artisan santoku knife has an SG2 micro-carbide powder steel core layered with a hand-hammered tsuchime finish that prevents food from sticking.
