The ice-hardened CRYODUR blade of the Miyabi Artisan comes in at a 63 on the Rockwell hardness scale. Crafted using the traditional Honbazuke process, the thin, hand-honed Japanese blade is made of SG2 micro-carbide steel and features a 9.5 to 12-degree katana edge that pays tribute to the Samurai heritage of the santoku knife.
