Close your eyes and imagine you're on a tropical island listening to the ocean waves roll in. A cucumber mojito with fresh mint; a daiquiri colada with fresh lime juice, coconut and pineapple; and a Caribbean Old Fashioned bring the taste of the Caribbean to you.

Ingredients


One whole cucumber
One whole lime for garnishing
Fresh mint leaves
Simple syrup, 3 oz
Fresh lime juice, 3 oz
Pineapple juice, 2 oz
Malibu Coconut Rum Liqueur, 2 oz
Light Rum, 5 oz
Club soda, 4 oz
Coconut Water, 2 oz
Bucket of ice
Bitters, Angostura pref.
Dark Rum or Whiskey, 3 oz
Pineapple leaf or wedge, optional

Kitchen Equipment


Cocktail shaker or jar with lid
Jigger or shot glass
Muddler or large wooden spoon
Three drinking glasses


Prep Work Details

Please prep fresh lime juice and simple syrup beforehand. This will save you a lot of time during the class. Angostura (aromatic) bitters are preferred. Simple syrup can either be purchased or made at home using the following steps: Add a half cup of sugar and a half cup of water to a pot. Put on a medium flame and stir until the sugar crystals fully dissolve. If you like, you can put your simple syrup in the fridge to cool down before class.

We all had an amazing time. Professor Baker was wonderful, funny, knowledgeable, and the cocktails delicious. The cocktails will be served all summer long and I would definitely recommend this class and Professor Baker to anyone. Simply great.
