Learn to make Thai spring rolls, sauces and tea using allergen-friendly ingredients.

In this online cooking class, you’ll prepare iconic Thai favorites that everyone can enjoy. Using allergen-friendly ingredients, Chef Lisa introduces classic Thai techniques for filling and rolling spring rolls as well as mixing dipping sauces, customized to accommodate common allergens such as gluten and nuts upon request.

Discover tips for working with rice paper wraps and achieving the balanced flavors and textures signature of Thai cuisine. Finally, you'll brew your own dairy-free Thai Iced tea using creamy coconut milk. Transform fresh, simple ingredients into a vibrant Thai menu in this fun and flavorful virtual lesson!

Wide mixing bowl or 2–3" deep platter
2 medium saucepots
Mesh strainer
Tongs or a metal spoon
Vegetable oil
3 medium mixing bowls
Clean countertop or smooth plastic cutting board
Dinner plate
Small whisk
Spatula
Two small bowls for dipping sauce
Chef's knife
Small utility knife
Measuring spoons
Latex, nitrile or vinyl gloves – optional unless working with a lot of chilies!
Fine grater or zester
Kettle
Large spoon or strainer
Ice
2 tall glasses or mugs


Prep Work Details

Hydrate cellophane or vermicelli rice noodles in cold water 30–40 minutes before class. Cook shrimp or prepare shredded chicken or cooked tofu. Thinly slice the lettuce, peel the carrots. Chop mint or cilantro leaves. Measure out all ingredients for sweet chili sauce (can be combined in saucepot ahead of time, except cornstarch and cold water mixture). Mince garlic, slice shallots, clean Thai chilies (if using). Prepare some ice.

My friend and I attended class with Chef Lisa and had such a lovely time! We learned lots of new skills in the kitchen and made delicious savoury and sweet hand pies! The class was entirely gluten and dairy free and I would recommend to anyone, allergen-free or not!

My wife and I recently attended the "Gluten-Free French Pastries" class with Chef Lisa, and it was a truly exceptional experience! I cannot recommend this class—and Chef Lisa—highly enough. Chef Lisa is an incredible instructor who is both patient and extremely knowledgeable. She is very personable and created a welcoming environment for the class. What sets her apart is how she shares her past experiences as a pastry chef, weaving in the fascinating history and the actual science behind the pastries we were making. It made the process so much more engaging than just following a recipe. As for the pastries themselves, every single one we made was exceptional. If you are looking for a top-tier baking class, look no further. I would gladly take any other class Chef Lisa teaches!
