Chef Brett will draw upon his culinary expertise to provide you with a lesson in all things smoked meat!
In this class, each dish you prepare will utilize a smoky element, from salmon to pork belly to bourbon. Learn how to perfectly smoke meat, and how to best incorporate them into each course. Begin with a smoked salmon dip, then craft a smoked pork belly cacciatore from scratch. The star of the show is smoked beef ribs with all the fixings. Even dessert will have some smoke to it!
Guests are welcome to provide wine and beer to enjoy during the class.

Chef Brett has a great knowledge of southern flavors and comfort food! I enjoyed hearing about both his local cooking experience as well as his time spent in the islands. I loved the made from scratch watermelon bbq sauce he made to go with the smoked beef ribs, and the homemade marina to go with the freshly made and "toasted" ravioli was delicious. The best was the jambalaya with its smoky Andouille sausage and the kick from the poblano peppers. Nom nom!

Chef Brett’s résumé boasts many notable career accomplishments, including starting at the bottom and working his way all the way up to sous chef in a mere four months at a highly esteemed restaurant in the Virgin Islands.
