What You’ll Do

This hands-on team building class will introduce your team to a classic Mexican recipes that they will use over and over again. Chef Paul’s signature guacamole is a great entertaining staple, it stands out from anything store-bought and says “Welcome!” to friends and colleagues. Your team will learn how to make a smoky tomatillo sauce for the enchiladas by grilling the tomatillos, burning them (yes, the chef says burn them) and blending them with spices and fresh herbs. You’ll make traditional yellow rice and drunken beans as a side dish, and top off this great meal by learning how to make a chili-infused chocolate cake.

Chef Paul has been a professional chef for nearly 40 years. Born and raised in Belgium, he started his cooking career as an apprentice. After receiving his culinary arts degree, he continued to gain experience in several restaurants in Belgium. In 1983, he moved to NYC and became the executive chef at famous restaurants in Tribeca and the West Village. In 2001, he opened his own cooking school, which is still thriving today.

We learned a lot and created a delicious meal to enjoy together! I am practicing chiffonnade, émincé, and coin cuts at home now and working on my knife grip to be more consistent. Lots to practice and think about once the lesson is over. Merci, Chef Paul!

We had an amazing time in this class with Chef Paul. We learned how to make different knife cuts like chiffonade, julienne, and diamonde and we also learned a few new cooking techniques. Chef Paul was very informative and fun to learn from. Thank you!
