Designed in Italy by Matteo Thun, this unique, high-quality blade combines traditional Japanese form with Western construction to create a knife that’s as functional as it is stylish. The curved shape of the bolster supports gripping the knife with thumb and index finger on the blade, a grip used by professional chefs the world over, to promote safer cutting and less fatigue. The precision-honed blade of this santoku knife features a broader curve in the front to make cutting with a rocking motion easier and more comfortable, while at the same time the straight back of the blade facilitates the chopping motions used in much of Asian cooking. And, forged from a single piece of high-carbon stainless steel and ice-hardened for lasting sharpness and resilience, this German-engineered knife is equally durable as it is functional.
