Online Mixology Class - Traditional Tiki Cocktails

Get ready to escape to the tropics and experience the exotic flavors of Tiki cocktails.

During this live and interactive online mixology class with Mixologist Cory, you will learn how to prepare three traditional Tiki cocktails in their truest form. Mixologist Cory will begin by discussing the evolution of the Mai Tai as you concoct the original version invented by Trader Vic. You can also look forward to learning how to make a bright, lightly spritzy Dr. Funk cocktail as well as a rich and fruity Painkiller.

Ingredients


Jamaican rum or other rum
Dry curaçao or orange liqueur
Lime juice
Rich cane syrup
Orgeat
Lemon juice
Absinthe or Herbsaint, Pastis or Pernod
Grenadine
Seltzer
Pineapple juice
Orange juice
Cream of coconut
Crushed ice, about 40-50 oz
Freshly grated nutmeg, mint sprig, spent lime shell and pineapple fronds for garnish

If making your own syrups as recommended by Mixologist Cory, you'll need:
Pomegranate juice such as POM Wonderful or alternative
Granulated sugar such as cane sugar
Almond milk
Slivered almonds
Orange blossom water, optional

Kitchen Equipment


Cocktail shaker
Cocktail strainer
Microplane
Ice mallet and Lewis Bag or alternative ice crushing method
Citrus juicer
Straws
Fun swizzle sticks, drink umbrellas, etc.
Two double old fashioned glasses, or two tiki mugs
One hurricane glass, large snifter, or a tiki mug


Prep Work Details

For best results, use freshly squeezed juices. You'll need (per person) approx.: 1.5 oz lime juice (save 1 spend lime shell for garnish) 0.5 oz lemon juice 1.5 oz pineapple juice (save fronds for garnish) 0.5 oz orange juice Prepare enough crushed ice to yield 3 cocktails (approx. 40-50oz). You can purchase pre-made syrups, or make your own. See recipes for each below. Rich Simple Syrup Two cups granulated sugar (Cane or demerara for best results) One cup water 1. Add the sugar and water to a small saucepan set over medium heat. 2. Stir until the sugar is dissolved. 3. Let cool, then pour into a glass jar and seal tightly with a lid. Homemade Grenadine 1. Combine equal parts pomegranate juice (POM Wonderful or other) & granulated sugar to a small saucepan set over medium heat. 2. Stir until the sugar is dissolved. 3. Let cool, then pour into a glass jar. 3b. Optional, add a few drops of orange blossom water and a small amount of vodka to increase shelf life. 4. Seal container and refrigerate. Homemade Orgeat 12 oz slivered almonds or other nut substitute 12 oz almond milk 12 oz granulated sugar Two drops orange blossom water 1. Toast slivered almonds in a pan, for a few minutes, until fragrant. 2. combine granulated sugar, almond milk, and toasted almonds into a blender, and blend on high for 1-2 minutes. 3. fine strain through a sieve, or cheese cloth into a container. 4. Add in orange blossom water, let cool, seal and refrigerate.
