Learn the secrets to preparing traditional Peking duck at home with Chef Li

In this online cooking class, Chef Li will guide you as you learn how to make restaurant-quality Peking duck in your own kitchen. Discover how to build the signature flavors and achieve the thin and crispy skin of this iconic dish. The chef will also teach you how to use these skills to make Peking duck pancakes from scratch, which you will enjoy alongside broccoli in a savory garlic sauce.

Whole duck, about 4-5 lbs
Maltose, find it in Chinese/Asian shops or on Amazon. Can also substitute with honey.
White rice vinegar (optional)
Chinese five-spice powder
Salt
Black peppercorn powder (optional)
Chinese cooking wine
Bread
Sweet bean paste
White sugar
Sesame oil
Green onions
English cucumber or mini cucumbers
Broccoli
Corn starch
Garlic
Chicken stock
All-purpose flour
Cooking oil

Roast pan with rack OR a baking tray and baking cooling rack

Prep Work Details

Tighten the duck skin and air dry the duck in the fridge overnight. Details can be found in the recipe.

Chef is very nice and answers all your questions but the class is boring as most of it is just waiting for the duck to cook. Maybe a more complex few side dishes could be made to pass the time…
