The class opens with handmade pasta all'uovo, rolled and cut before being tossed in a traditional ragù alla Bolognese built on meat, tomato, pancetta and aromatic vegetables. Saltimbocca alla Romana follows – tender veal layered with prosciutto and finished in butter – before the evening closes with a tiramisù made from a cherished family recipe.
