The key to vegan Mexican food? A good, high-quality cheese substitute. In this hands-on cooking class, Chef Telah will teach you how to make homemade cashew cheese you can incorporate into any dish at home.
Begin with vegan nachos topped with beans, tomatoes and cashew cheese, and a fresh salad mixed with lime-cilantro vinaigrette. For the entrée, prepare an enchilada pie packed with beans, sweet potatoes and fresh cilantro, with the option to add chicken and regular dairy cheese. For dessert, mix up a rich chocolate mousse featuring avocado, cacao, cinnamon and dates.
Guests are welcome to bring wine and beer to enjoy during the class.
