Learn the secrets behind four spice-laden dishes inspired by the waters of Jamaica.
As an island in the middle of the vibrant Caribbean, it's no surprise that seafood plays an important role in Jamaica's culinary tradition. In this hands-on class with Chef Cleon, you'll learn how to use a unique spice blend to prepare authentic Jamaican seafood dishes.
To begin the evening, you'll put together some strikingly delicious fish cakes. Next, you'll work on curried shrimp and bammy sticks, a Jamaican flatbread made from cassava. Be sure to save room for banana fritters topped with allspice and brown sugar for dessert.
Guests are welcome to bring wine and beer to enjoy during the class.

I learned so much about Jamaican dishes and flavors with Chef Cleon. All the dishes were full of flavor and he did a great job of mixing herbs and spices that really complemented each other. It made me excited to try new things with my own recipes at home.

As a chef, teacher, and culinary student, Chef Cleon excelled at putting his own spin on complex recipes, a habit that's earned him a handful of awards throughout his career. Since relocating to the Boston area, Chef Cleon has continued to push boundaries in the culinary industry.
