WHAT YOU’LL DO
The classic tastes of Italy and Japan receive an update in this American fusion class.
In this hands-on class with Chef Josh, you will feel as if you have just stepped into a brasserie or trattoria. Using seasonal ingredients and simple, straightforward cooking techniques, be prepared to create incredible dishes completely from scratch.
Learn how to cut sashimi-thin slices of high-quality yellowtail fish, and discover how to impeccably flavor it with pickled rhubarb. Next, utilize both wet and dry heat to cook pork belly to tender perfection. The star of your meal is a seasonal fish with artichokes à la barigoule, followed by a zesty citrus tart for dessert.

Vernetta T.
From Chef Josh's mouth-watering braised pork belly, to his salt baked whole branzino, delectable ricotta gnocchi, and exceptional rhubarb cobbler, all were absolutely amazing! The visual details were beyond measure, the flavor, and use of various spices were simply divine. His eye for detail, sensitive palate, coupled with his knowledge of food from various corners of the globe, make for a winning combination. A chef who's worked in some of the finest restaurants in the country, brings creativity to share with all who work with him. His intoxicating personality, expertise in his craft make a winning combination for those who have the pleasure of dining on his creations, or simply learning cooking techniques from him.
