¼ cup vinegar
1/3 cup olive or any cooking oil
1 bunch fresh cilantro (optional, for serving)

Medium saucepan, for beans
Large flat griddle, cast iron, or nonstick pan, for toasting tortillas
1 baking sheet or large roasting pan, for sweet potatoes
Parchment paper, waxed paper, or a gallon-sized Ziploc bag for pressing tortillas
1 flat pie plate or something to flatten tortillas with (unless you have a tortilla press!)
