Learn how to layer sweet and savory flavors in every dish from appetizer to dessert.
In this hands-on class, Chef Todd has prepared a three-course menu for you to create focusing on the layering of dichotomous flavors.
You will begin with field greens and local avocado dressed with California orange vinaigrette and crunchy roasted sunflower seeds. For the main course, a warm bowl of vegetarian black bean chili that includes roasted corn served and white cheddar corn bread with a kick. You will end with a twist that returns sweet and savory to the palate with a freshly brewed espresso shot and dark chocolate.
Guests are welcome to bring wine and beer to enjoy during the class.

Chef Todd provided an amazing experience for my wife and me. The food was delicious, and Chef Todd did a wonderful job of answering all of our questions. His home and kitchen were open, warm, and inviting. Time just flew by because we were having so much fun! Meet your chef
Chef Todd realized his true passion for cooking after learning from another talented chef and spent the majority of his culinary career as an executive chef catering for several large companies. Chef Todd has now expanded into the realm of teaching and has proven to be an excellent host with a great personality. He is also an avid surfer and his cooking style hinges on Southwestern and Mexican cuisine.
