Chef Ruth brings the culinary spirit of New Orleans to Seattle in this hands-on class.

In this class, Chef Ruth shows you just how easy Big Easy cooking can be. She will teach you the skills and techniques needed to recreate her three-course menu reminiscent of the French Quarter in New Orleans.

You will begin class by learning the techniques to make the perfect roux. Next, it's onto the art of cooking grains as well as proper handling and preparation of shellfish. And for the grand finale, you will get the opportunity to experience firsthand how to impressively flambé a classic Big Easy dessert.

Guests are welcome to provide wine and beer to enjoy during the class.

I really like Chef Ruth, but she didn't have some key ingredients for her dishes and had to use our food. The food was good, not great, and not very authentic. Also, I thought this was going to be more of a cooking "class" type of experience, where we would all be cooking along, and we really just watched her cook.

I had high expectations for the experience and unfortunately I was pretty disappointed. This was not a class, it was just having someone cook for you. I expected to have it organized in groups of us prepping, etc... There were no recipes during the class, the chef forgot ingredients; grits, salt, cheese, butter and oils. She asked to use what we had on hand and left her knives at a previous event. The chef would mention things she was putting in, but not really demonstrating technique. The flavor was ok, but thought the gumbo lacked spice. In addition, for the price, the quality should have been better. She used Johnsonville packaged sausage, low quality chicken, value whip cream. I would have thought it would be organic and high quality ingredients. Overall I was not impressed and would not recommend this for anyone looking for a class.
