Fresh produce and protein are perfect canvases to practice knife-cutting techniques. In this class with Chef Laura you'll learn basic knife skills from Chef Laura to keep you safe and to save you time in the kitchen.

You'll begin with a Thai peanut slaw featuring two kinds of Napa cabbage and your choice of chicken or fish, which you will learn how to de-bone or fillet from start to finish. Next, prepare for happy taste buds as you create a fresh salad with jicama, mango and cilantro. End the class with a tangy and sweet caramelized spiced pineapple and fresh whipped cream you'll crave for days.

Guests are welcome to bring wine and beer to enjoy during the class.

I am extremely picky about salads, a good salad needs to be crunchy and flavorful and fresh and varied. It should have balanced flavors and leave you wanting another bite. Chef Laura's salads are miraculous. They are symphonies of harmonious flavors that combine in the most amazing ways. Sweet mango, crunchy Jicama and peanuts in an Vietnamese-style dressing. She easily demonstrates how to combine fresh ingredients to make mouthwatering salads but also shares her secrets for simple techniques like chopping and knifework. Highly recommended.

What a fun night! Chef Laura was an excellent teacher and host. We honed our knife skills chopping up veggies for the soup, stuffed mushrooms, and sauce. We learned all about different types of mushrooms and how to clean and cook them. So many things to learn! And in the end, the meal was delicious and we had plenty of leftovers to take home along with the recipes. (My mother-in-law was also pleased that she and Chef Laura attended the same university... LOL.)

Chef Laura grew up in a food-industry Italian family in Pennsylvania, and attended Penn State before working as an accountant in Washington D.C. In 2008, she traveled to Italy to learn classic pasta making, and was hooked. Shortly thereafter, Chef Laura attended L'Academie de Cuisine where she learned French cooking methods, and in 2009 she began working as a personal chef. Chef Laura enjoys teaching proper cooking techniques rather than particular recipes.
