Embrace the bounty of wall during this class. During this class, you will learn how to do easy prep and teach you cooking and plating techniques that you’re sure to treasure long after fall is over. You'll start with a salad made of farro, squash, shelled beans and bacon, followed by an eggplant tomato gratin with mint, feta and olives and finish with a savory bread pudding with wild mushrooms and green beans, a lemon rosemary roasted chicken and a sweet roasted pear crumble to finish off the class.

Meet your chef
As a youngster, Chef John would skip school to make tomato soup and grilled cheese from scratch at home. Decades later, his passion for fresh food is just as strong as it ever was. He headed to college where he befriended and learned from chefs from the Caribbean, Southwest, Mexico and the South. Today, he travels to the Southwest and the South to discover new and exciting cooking techniques.
