This class features a fish soup and particulars of making a fish fumé, or stock, as your base. Next, you'll learn all about the practice of "cooking" with acid in a refreshing shellfish ceviche, followed by preparing a satisfying and crowd-pleasing paella. For dessert, discover the tricks to making a perfectly gooey chocolate lava cake.
