For this culinary excursion, create a chile pepper Caesar salad topped with cotija cheese. Next, prepare the main course: enchiladas filled with roasted chicken and Hatch chiles. For dessert, whip up a caramel mousse and serve it with sweet vanilla cream and a blueberry coulis.
