In this hands-on class, Chef David instructs on the fares of Provence—a region in southeastern France bordering the Mediterranean Sea—procuring influences from the iconic cuisines of Italy and Greece.
You will begin with a glance at the bounty of seafood, vegetables, and cheeses branded by the sunbaked Mediterranean, with an emphasis on herbs and spices. Then, move onto the techniques and knife skills needed to prepare a beautiful heirloom tomato and goat cheese terrine, and sea bass with Provencal vegetables. End with a homey, yet impressive seasonal fresh fruit clafoutis.
Guests are welcome to provide wine and beer to enjoy during the class.
