WHAT YOU’LL DO

Join Chef Jeffery as he leads you on a journey through classic French countryside fares.
In this hands-on class, Chef Jeffery will instruct on classic French country cuisine using basic cooking techniques to elevate fresh, inexpensive ingredients in the style of bonne femme, which is translated into “housewife style,” or a style that can be prepared in a short time to the delight of the entire family.

Begin with a soul-warming onion soup with a gouda croustarde. An indulgent entrée of buttery Normandy scallops sheathed in a thin puff pastry cup topped with mushrooms, fresh herbs, sherry, and cream precedes a peasant-style chicken bonne femme.
Guests are welcome to provide wine and beer to enjoy during the class.

Coquilles St. Jacque
Normandy scallops, lightly sauteed then placed in a puff pastry cup topped with mushrooms fresh herbs, sherry and cream
