With more than 15 years of culinary experience, Chef Paulo brings culinary creativity, team leadership and kitchen organization skills to the table. He has extensive experience as an executive sous chef, a restaurant manager, a bartender and a general manager. Fluent in English and Portuguese, with intermediate Spanish skills, he infuses a variety of flavors, fragrances and textures into his recipes, which span the globe from Brazil and Australia to Tucson and San Diego.

We took the sushi class and learned how to do three types of rolls and hand rolls. Chef Paulo was super knowledgeable and approachable. It was a really fun experience learning how to cook the rice, cut the fish and other fillings, and learn how to roll them. We are all beginners and he helped make sure all of us were able to complete all of our rolls. I would absolutely recommend the class and chef Paulo personally

We had an amazing sushi cooking class with Chef Paulo. He helped us cook the rice, learn 4 different types of rolls, and even some history! We ended the night with our bellies full and a ton of leftovers.

Chef Paulo was awesome!! He was spot on in teaching us the basic of sushi making so we can make a variety of sushi rolls in the future. And we got a bonus of learning to make a hand roll. He was also very flexible and responsive in working with us on the menu/fish options. 10 stars would highly recommend and do it again!

Cooking with Paulo is hands down one of my favorite experiences to repeat. I’ve taken his sushi class a few times now, with adults, and even with kids, and it never disappoints. He is patient, knowledgeable, and so good at breaking things down in a way that feels simple and doable.
I’ve learned a wide variety of rolls, the food is incredible, and the whole experience is fun, informative, and interactive. It’s the perfect mix of learning and enjoyment, and I always walk away feeling confident (and very full!).

Chef Paulo has excellent expertise in tropical Brazilian cuisine and a world of experience in other gastronomies, having lived in Australia and San Diego. In all those places, he accumulated 15 years of experience and excelled at honing his skills and is always excited to share his craft with new and repeat guests.
