A pioneer of the farm-to-table movement, Chef Bruce is a fifty-year veteran of culinary instruction and restauranteur. You and your teammates will be learning classical French cuisine from a veritable Seattle legend who made his mark using only the best organic produce and foraged forest ingredients.

In this simple three-course class, sharpen your skills and learn the pillars of French cooking: Stocks, sauces and sorbets. You will be hands-on in creating root vegetable and truffle soup, salmon with thistle and sorrel, and apple, quince and ginger sorbet.

Guests are welcome to bring wine and beer to enjoy during the class.

My wife Sara and I have owned restaurants in the Seattle area for over 30 years. Our restaurant Le Gourmand was one of the pioneers of 'Farm to Table' cooking and I am often referred to as the 'Father of Northwest Cuisine'. I specialize in classical French Cuisine using local organically-grown ingredients and wild, foraged edibles and am in my fifth decade of culinary instruction!
