In this informative cooking class, Chef Faramarz will share with you the traditions and techniques of classic Persian cuisine as it pertains to preparing lamb shank and a variety of traditional side dishes.
In addition to the main lamb dish, you'll learn to expertly prepare the customary fava bean rice, a vibrant mix of long grain rice, tender fava beans, and golden-hued saffron, as well as a vivid and tangy homemade beet yogurt and barley soup. Both the rice and the yogurt provide balance to the richness of the lamb and work equally well with other proteins.

I love going out for Persian food, but never would have known where to start if I tried to make it at home. Chef Faramarz has such a breadth of knowledge about the ingredients needed and the various classic dishes in Persian cuisine--I learned so much in the few hours I spent with him! His food is amazing, too--I loved the bread he made and even took some home to have with honey and butter the next day, as he recommended. I also couldn't believe how flavorful the vegan eggplant dish was! I'll for sure be creating some of the dishes again at home.
