Chef Justin will show you how to create the five classic French mother sauces from scratch.
French cuisine is famous for cooking with wine and for five classic sauces referred to as "mother sauces": espagnole, velote, hollandaise, tomato and béchamel.
The first course features escargot, a classic dish of snails in garlic and butter sauce, followed by salad niçoise with grilled tuna, eggs, capers, beans and homemade vinaigrette. For your entrée, learn how to cook the perfect filet mignon with brioche and truffle demi-glace, and last, but certainly not least, is a cream puff tower constructed of pâte à choux, cream and caramel.
Guests are welcome to provide wine and beer to enjoy during the class.

A highly accomplished chef, Chef Justin has a wealth of culinary experience under his belt. After completing his culinary schooling, he went on to work as a sous chef, galley chef, banquet chef, and more, until he had the opportunity to overtake a restaurant and make it his own. Chef Justin is experienced in creating authentic and visually-stimulating, seasonally appropriate menus for his guests, from large to small crowds.
