In this hands-on class with Chef Rob, you will learn everything you've ever wanted to know about offal, including the proper cleaning, preparation, and how to incorporate them into composed dishes.
Some of recipes you can look forward to learning how to prepare in this class include foie gras with a homemade sour cherry compote and brown butter toasted brioche, veal sweetbreads with a traditional demi-glace, chicken liver mousse, pork and chicken liver pate, and an apple cinnamon foie gras crêpe with a vanilla bourbon gastrique and dried apple crisps.
Guests are welcome to provide wine and beer to enjoy during the class.
