Begin by charring eggplant to create a smoky, velvety dip. Then, learn braising techniques as you simmer an aromatic Persian stew and layer it together with warm spices. Master fluffy basmati rice with golden tahdig, the crispy, saffron-infused crust. Finally, churn a refreshing pistachio ice cream delicately scented with saffron.
