The star of this menu is a spin on beef wellington, using pork tenderloin dowsed in an opulent cognac sauce to celebrate the season. Pancetta will add flavor and texture to basic brussel sprouts while fresh herbs give roasted potatoes a newfound elegance. Starting with basil BLT bites and ending with a decadent chocolate caramel tart, this winter meal will impart a slew of classic cooking techniques and impress holiday guests.
Guests are welcome to bring wine and beer to enjoy during the class.

Chef Carol is an incredibly talented chef with such a warm personality. Her skills with hosting classes and catering events really shine as she teaches cooking methods and practical skills to use in your own home. The food is delicious, beautifully plated, and flexible for any occasion. Her home offers a clean and elegant environment for learning and having a good time as you enjoy her classes. A dynamic teacher, Chef Carol delivers classes designed to provide techniques and tips to make cooking successful and enjoyable. She holds a culinary arts degree and is an honors graduate from the International Culinary School at The Art Institute of Dallas. She has worked with hundreds of nationally known instructors, cookbook authors, and professional chefs, and has years of experience as an instructor at Milestone Culinary Arts Center, Williams-Sonoma, and Le Creuset, to name a few.
