Learn the craft of fresh pasta from someone who has studied it at the source in this hands-on cooking class with Chef Shawnie, a chef instructor and food writer who developed her technique cooking in the Tuscan countryside. Whether you are brand new to pasta making or looking to refine your skills, this session offers the kind of grounded, technique-first guidance that builds lasting confidence.

 

You'll start by mixing and kneading a silky egg pasta dough, learning to read the dough by touch before resting and rolling it out. From there, the session moves into shaping – filling, sealing and forming delicate ravioli, elegant tortellini and fazzoletti, herb-stuffed pasta sheets folded like handkerchiefs. Two sauces come together alongside: a bright classic tomato and a layered basil and sundried tomato pesto. Specialized pasta-making equipment is provided – all you need to bring is your appetite. Shawnie is an outstanding teacher and chef! I have attended several of her classes and enjoyed every single one. She brings a combination of experience and approachability to cooking. At the end of each of her classes I felt that I had new skills afterwards and was excited about not only the meal we prepared but the techniques we learned. I especially appreciated her organization and follow-up, which allowed us to focus on cooking and learning without distraction.
