You’ll begin by mixing semolina flour and water into a smooth dough, then learn how to roll, drag and shape it into the signature “little ears” of orecchiette. Once your pasta is ready, turn your attention to a fragrant Genovese pesto prepared with fresh basil, garlic, nuts, rich cheeses and olive oil.
