Experience the glory of an under-appreciated California wine region, El Dorado County, in this tour, cooking class, and meal with Chef Joel.
You will start with a tour of the region, stopping at a few wineries to sample the local wines. Local varietals include Zinfandel and Petite Syrah, with some occasional Pinot Noir and Chardonnay.
Chef Joel will then bring you back to his home, where he will teach you a variety of traditional French cooking techniques using seasonal local ingredients. Relying on produce and provisions from the area surrounding his home in Fair Play, and calling on his training from the former French Culinary Institute (now known as the International Culinary Center), Chef Joel will teach you how to make high-end, delicious, and beautiful dishes.
Chef Joel invites guests to buy wine at their favorite winery to accompany the class and meal.

Chef Joel is an expert host. We showed up at his beautiful house in Fair Play, and got a tour of the property on his tractor -- from the plots of vegetables to the fields of Zinfandel grapes. We then took off in his truck to a few different wineries for free tastings, including a private barrel tasting at one, and I bought a few bottles for friends back home. Back at Chef Joel's he prepared a stunning meal with local and organic produce, fish, and meat, and taught us everything as we went along. It was an incredibly full, fun, and enchanting afternoon. Thanks Chef Joel!

Chef Joel's dishes are works of art. His crab timbal was so impressive that I was almost hesitant to try it and ruin the structure. This is such a fun class where you get the chance to practice some great techniques and use some beautiful ingredients like courgette flowers! Chef Joel has some great knowledge and it's wonderful to chat and cook with him.
Meet your chef
I am passionate about food and the land from where it comes. I graduated from the French Culinary Institute (now International Culinary Center) in Campbell CA, where I focused on preparing local ingredients in traditional French styles. I continued to pursue this combination of local ingredients with French flair in NYC, London, and now the Bay Area. I also teach at my family home in El Dorado County, where we are surrounded by bountiful produce and incredible wine.
