Cooking Class - Restaurant Plating

Learn the secrets to creating luxurious, restaurant-quality cuisine and techniques for stunning plating.

Join Chef Josh to explore the concepts and fundamentals of fine dining from utilizing elegant ingredients to exploring the art of plating. Having trained in an array of Michelin-starred restaurants across the country such as Charlie Trotter's in Chicago, Chef Josh has built an array of impressive skills which his clients are sure to glean.

This class has a major focus on techniques of plating, including how plating impacts the diner and an examination looking at height, landscape, flow of the plating, and garnishes. These techniques will be taught through a variety of luxe dishes like crisp cold smoked asparagus, a delicate soft-poached egg perched atop silky polenta, creamy chicken terrine sprinkled with textured pistachio praline, and a dramatic buttermilk cake strewn with contrasting cremeux and caramelized citrus puree.

Guests are welcome to bring wine to enjoy with the meal.

Josh is a super talented and sharp chef! His breadth of knowledge is really impressive, but he's able to share it in such a way that isn't intimidating at all. I was so fascinated by the way he plates his food, and feel like I really learned a lot in just a couple of hours. I'd take another class with him, or try a private dining experience to just relax and be pampered!

Chef Josh grew up in the kitchen cooking with his father and began cooking at local restaurants through his early school years. After college, he moved to Chicago and worked at the legendary Charlie Trotter's as well as three Michelin-starred L2O and several other Michelin-rated restaurants in Chicago and San Francisco. Recently, he moved back to his hometown, Los Angeles, and worked at Petrossian, Providence, Red Medicine and Alma before transitioning to being a private chef.
