Beloved for its flavor and versatility by professional chefs, pork is an ingredient often deemed too intimidating to cook at home. Chef Ronny has a thorough mastery of utilizing pork, and this class covers every aspect of how to use it in the kitchen.
The class begins with an exotic delicacy, seared head cheese, before progressing to dry-aged bacon served atop buttered bread with exquisite Santa Barbara uni. The latter portion of the class involves savorous roasted pork loin and 72-hour confit pork belly. The meal concludes with an ultra-savory pig ear salad.

Chef Ronny knows what he's doing. He has great knowledge behind the apron, and he's more than willing to share that with you. His cuisine is outstanding, and I cannot rave about the pork belly enough. It had deep flavor, and was unbelievably tender and moist. The perfect texture. Chef Ronny is a true craftsman in the kitchen, I highly recommend his classes.
